
Ingredients:
- Chicken
- Avocado
- Spring Mix
- Celery
- Pepper
- Mayo
- Dijon Mustard
- Green Peppers
- Bread of Choice
Directions
- Dice chicken and celery.
- Mix chicken, mayo, celery, pepper, and mustard. Refrigerate overnight.
- Slice green peppers into rings, place in sandwich bag and refrigerate overnight.
- Peel and slice avocados when ready to serve.
- Toast bread, top with spring mix followed by chicken salad, two slices of green peppers and three slices of avocado.
- Slice, plate, and serve with a pickle.
