Chicken Ingredients
  • 1 boneless, skinless chicken breast
  • 1 tablespoon salt
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon paprika
  • 1/2 tablespoon garlic powder
  • 2 tablespoons olive oil
Burrito Bowl Ingredients
  • 2 cups brown rice, prepared
  • 2 cups romaine lettuce, chopped
  • 1 cup canned black beans, drained
  • 1 cup canned corn, drained
  • 1 avocado, sliced
  • 1/3 cup cheddar cheese, shredded
  • 1/3 cup plain Greek yogurt
  • 1/4 cup salsa
Chicken Directions
  1. Use a sharp knife to cut the chicken breast in half, lengthwise.
  2. Season chicken breast with salt, black pepper, paprika, and garlic powder.
  3. Heat the olive oil in a small frying pan on medium heat. When the pan is hot, place the chicken into the pan.
  4. Cook for three minutes on each side or until the chicken is cooked thoroughly and reaches an internal temperature of 165 degrees Fahrenheit.
  5. Remove the chicken and let rest for two minutes before slicing.
Burrito Bowl Directions
  1. In a medium bowl, layer rice, romaine lettuce, black beans, corn, and avocado. Sprinkle on cheddar cheese, then drizzle Greek yogurt and salsa. Place prepared chicken over the top.
  2. Enjoy immediately or place in the refrigerator for up to two days.
