  • 1 cup quinoa, uncooked
  • 1 pound chicken breast
  • 1/2 cup cherry tomatoes, halved
  • 1/3 cup feta cheese, crumbled
  • 1/2 avocado, sliced
  • 1 cup corn
  • 1 tablespoon oil
  • Lime (optional)
Chicken Seasoning
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  1. Cook quinoa according to package instructions. Fluff the quinoa with a fork and cover to keep warm.
  2. In a bowl, combine seasonings for chicken and coat the chicken. Over medium heat, heat one tablespoon oil in a skillet. Cook chicken for five minutes on each side.
  3. Cut the tomatoes and slice the avocado. Slice the chicken breast into thin slices. Add quinoa to a bowl, top with chicken, corn, tomatoes, avocado, and feta cheese. Drizzle fresh lime over everything (optional).
