  • 1/2 cup vegetable oil
  • 1 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 15 ounce can of pumpkin puree
  • 2 cups flour
  • 1/2 tablespoon cinnamon
  • 1/2 tablespoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  1. Preheat oven to 325 degrees. In a large bowl add oil, sugar, brown sugar, and eggs, and whisk until well combined.
  2. Add pumpkin puree to the mixture and stir.
  3. In a small bowl combine flour, cinnamon, nutmeg, baking soda, baking powder, and salt. Mix together, then slowly stir the dry ingredients into the pumpkin mixture.
  4. Pour batter into two greased 8x4 loaf pans. Bake for 50-60 minutes or until a toothpick can be inserted into the pumpkin loaf and come out clean.
  5. Let rest for 10 minutes in a pan and then move to a wire rack to cool further before serving or storing.
