Vinaigrette
  • 2 cups fresh or frozen raspberries
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar or balsamic vinegar
  • 2 teaspoons Dijon mustard
  • Salt and pepper, to taste
Salad
  • 10 ounces Spring mix lettuce, rinsed and chopped
  • 1/2 cup crumbled feta cheese
  • 1 cup chopped walnuts
  • 1 1/2 - 2 cups fresh strawberries, rinsed and chopped
  • 1 red onion (optional)
  • 1 grilled chicken breast, sliced (optional)
  • 1-2 cloves garlic, peeled and minced (optional)
Vinaigrette Instructions
  1. Add all ingredients to a food processor and blend until smooth.
Salad Instructions
  1. Add all salad ingredients to a large bowl.
  2. Top with desired amount of vinaigrette.
  3. Toss the salad with tongs or add a lid and shake until well-combined
  4. Top with optional ingredients, if desired.
